Yeast is an active, live culture that will not do its job if frozen for too long. You can get away with freezing it for a few days--it puts the yeast to "sleep," but it will not do its job if frozen for a week or longer. Make sure to let it rise before freezing. Also, you can freeze pizza dough for several months, because it is generally flat, but you will not have such luck with loaf bread if frozen for too long.
